Cheesy Pasta with Ham
Cheesy Pasta with Ham:
1/2 pound fresh asparagus
3 ounces ditali pasta -- uncooked
1 teaspoon reduced-calorie margarine
1/2 teaspoon minced garlic
1 tablespoon all-purpose flour
1/3 cup no-salt-added beef broth
1/4 cup fat-free milk
2 ounces Ham – diced (about 1 2/3 cup)
1 ounce shredded reduced-fat Cheddar cheese -- (1/4 cup)
1/8 teaspoon ground white pepper
Snap off tough ends of asparagus. Remove scales. Cut spears into 1-inch
pieces. Arrange in a steamer basket over boiling water. Cover and steam 3
minutes. Drain. Cook pasta according to package directions, omitting salt
and fat. Drain; keep warm. Melt margarine in a nonstick skillet. Add
garlic; sauté 30 seconds. Add flour; cook, stirring constantly, 1 minute.
Add broth and milk, stirring constantly. Cook over medium heat, stirring
constantly, until slightly thickened. Add asparagus, ham, cheese, and
pepper, stirring until cheese melts. Stir in warm pasta, and serve
immediately.
Yield: 2 (1-1/4-cup) servings.
