Country Breakfast Low Fat:
COUNTRY BREAKFAST
CASSEROLE

Serves: 10
8 oz. reduced-fat smoked link sausage
2 T. maple syrup
2 lb. frozen country=style browns (no oil added)
2 c. skim milk
Egg substitute equivalent to 6 eggs
2 sliced fat-free or low-fat American cheese, diced (2 oz.)
1/4 c. grated Parmesan cheese
1/2 tsp. dry mustard
1/4 tsp. pepper
2 T. finely snipped green onion (green part only), optional
Preheat oven to 350-F. Lightly spray a 13-in. x 9-in. x 2-in baking dish
sprayed with
nonstick cooking spray. In a nonstick skillet over medium-high heat,
saute sausage for 3-4
minutes or until browned, turning occasionally Wipe skillet with a paper
towel. Add maple
syrup and cook for 1 minute, stirring to coat sausage. Arrange in a
single layer in baking
pan, then top with hash browns. In a medium bowl, whisk together
remaining ingredients
except green onion. Pour over hash browns. Bake for 1 hour, or until the
center is set.
Sprinkle with green onions if desired, and let cool for at least 10
minutes before cutting into squares.
