Breakfast in a Muffin
Breakfast in a Muffin:
2 slices bacon-style
turkey -- cooked
1 3/4 cups all-purpose flour
2/3 cup oat bran
1/4 cup granulated sugar
2 tbsp granular low-calorie sweetener with sucralose
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. dried oregano
1/4 tsp. paprika
1 cup shredded light Cheddar cheese
2 green onions -- thinly sliced
1 1/4 cups buttermilk
1/4 cup vegetable oil
1 egg -- OR 2 egg whites
Crumble cooked bacon into small pieces. In large bowl, combine bacon,
flour, oat bran, sugar, sweetener, baking powder, baking soda, oregano,
paprika, cheese and onions. In second bowl, combine buttermilk, oil and
egg. Pour into dry ingredients; stir until combined. Divide batter evenly
between 12 non-stick or paper-lined medium muffin cups, filling 2/3 full.
Bake in 400°F (200°C) oven for 20 minutes or until firm to the touch.
